Weekly Menu {1/9/2014} & Clean Eating Update

It's that time of week again - time to plan out another week of meals!


Check out this week's recipes:
Crockpot Shredded Beef Enchiladas - this is a new recipe I am trying! My friend Essie made it as a part of our freezer meal exchange. 

Penne Pasta & Clean Eating Marinara - I'll be using some whole wheat penne pasta from Trader Joe's and combining it with this awesome Dashing Dish recipe for sauce! I was looking for a delicious no-meat night. If you want to avoid the pasta - you could always make it with spaghetti squash.

Pizza Stuffed Chicken Breasts - I am a HUGE fan of chicken roll ups. I also love pizza. This recipe fits both of those! I can't wait to try this one out this week. 

Brunch - my family enjoys Sunday brunch. I may whip up some Skinny Blackberry Banana Muffins. We'll add some eggs and fresh fruit to the spread. 

Breakfasts: oatmeal with honey & cinnamon, eggs & fresh fruit
Lunches: salad, eggs & fresh fruit, organic soup
Snacks: organic cheese stick, fruit, air popped popcorn, carrots & hummus, nuts


It is Day 8 of my clean eating challenge. I have to say - I have done very well and I feel great! I within just over a pound of my pre-holiday weight. {I am about 3 pounds away from my next prize envelope - a Stitch Fix!} There may have been a lapse that involved a handful of gummy bears, but other than that - I have been on track with my eating. I'd say 90% of all I ate met the clean guidelines I posted last week. 

I did track calories with MyFitnessPal just to get a general idea of where I was with portions, etc. I know clean eating allows you to eat without having to count - but I have never done well with that. I have to have that structure. If I am hungry - I just make sure I pick a healthy snack. 

This next week I'd really like to focus on increasing my veggies and water. I know you are supposed to drink 1/2 your body weight in ounces each day. (i.e. 150 lbs = 75 oz water). I wake up really thirsty when I don't get in enough water! Anyone else experience that? 

Activity! I accepted a FitBit challenge hosted by Jess Walker - Day at a Time Fitness Gal

The challenge has really motivated me to get moving! I have started back to work this week, so it's been harder to get in those steps. I work at home, but am tied to my computer. This has gotten me up and moving and has forced me to be very deliberate in getting in that activity. I'm determined to meet that 12,000+ goal EVERY day! So far - so good.

I have been walking on the treadmill a lot and reading. I've decided to devote some of that reading time to some devotionals and scripture reading. I think it would be a great way to work out my body and feed my soul.
